Schezwan is supposed to be tooooooo spicy. But here am going to share this recipe where you can tune your spice level and make it as perfect for your family as well as kids. You might be buying schezwan sauce from indian store or from asian market. But do you know that its really easy to make schezwan sauce at our sweet home ? Just make like a bottle and you can store it for months. And you can use it for any type of chinese dishes you make. I just love dis sauce for its extraordinary taste and it makes ur dish a perfect chinese type !!

Ingredients
- Oil - 4 spn ( This sauce takes in more oil )
- Ginger - 1 medium size chopped
- Garlic - 10 to 15 cloves chopped
- Red Chilly - 15 to 20 Remove the stems and soak them in hot water for 1 hour
- White Pepper - 1/2 spn
- Vinegar - 1 spn
- Soya Sauce - 1/4 Spn
- Chilli Sauce - 1/2 spn
- Salt -To taste
- Sugar - 1/4 Pinched
Method
- In a wok add oil , ginger and garlic
- Fry till the garlic turns slightly brown
- Meantime blend the soaked chillies into a fine paste ( If you prefer less spice remove the seeds from the chilly and grind it )
- Once the garlic is ready add the blended paste and fry till the pungent smell vanishes
- Add salt and pepper powder
- Then add soya sauce , vinegar and store bought chilli sauce
- Mix well. To get the bottled schezwan sauce consistency add 5 spn of water
- Once you get the saucy consistency check for taste and if everything is fine add sugar
- Transfer to a bowl or air tight bottle
