Many people dont order malai kofta at restaurants because of its mild creamy taste with 0 spice level. But believe me its such a rich gravy that is prepared only at mughlai king's house at olden period. Because this gravy is full of nuts and cream. Vegetarians would definitely love this dish at some point of time when they get bored of eating spicy foods. Ofcourse you can treat your family members once a while with this creamy gravy though its a bit lengthy process

To Prepare Koftas
Ingredients
- Bowl of Veggies ( Carrot,Beans,Peas,Cabbage etc) chopped and boiled
- Potato - Boiled separately and mashed
- Nuts - Cashews , Almonds and raisins fried in ghee
- Paneer - Grated ( Half bowl should do )
- Salt - As per ur taste
- Red Chilly powder - 1 Spn
- Coriander Powder - 2 Spnpare
- Garam Masala - 1/2 Spn
- Corn Flour - 5 Spn
- Oil - For Frying
- Mash all the boiled veggies and stain extra water through a muslin cloth
- Add them in bowl with mashed potatoes and grated paneer
- Mix them well and add all the remaining ingredients one by one
- Mix gently and form small balls ( If u feel the mixture has water content add some bread crumbs)
- Dip the balls in corn flour and keep them seperately
- Fry them in oil till light golden brown ( Dont wait till u notice a good color. Koftas are usually meant to be in white or light brown color )
- Koftas are ready to be added to the gravy
Ingredients
- Onion ( Preferably white onion ) - 1 cup chopped
- Cashews - 15 to 20 soaked in hot water for 20 to 30 min
- Bay leaf - 2
- Cinnamon Stick - 1
- Cardamom - 6 to 8
- Ginger Garlic Paste - 2 Spn
- Green Chilly - 3 Nos slit lengthwise
- Black Pepper Powder - 2 spn ( Optional )
- Butter - 1 Spn
- Sugar - A Pinch
- Salt - As per ur taste
- Cream - 1 Cup
- Oil - 3 Spn
- Boil the chopped onion in water till soft and grind them to a smooth paste
- Similarly grind the soaked cashews to a fine paste
- In a pan add oil , bay leaf , cinnamon and cardamom
- Add ginger garlic paste and onion paste
- Fry nicely till the onion paste oozes out the oil and the raw smell vanishes
- Then add green chilly and the cashew paste and fry nicely till the gravy becomes dry ( Make sure not to burn the sauce )
- Once the gravy becomes dry add water and mix gently to form a nice sauce
- Add butter and salt and mix well. Then add sugar
- At last check for salt and if you feel u need some spice add pepper powder.
- Add a cup of cream and mix well.
- The sauce is ready for the koftas to be added

Note
- Add the koftas just befor you serve. Otherwise the koftas will become soggy.
- Koftas are prepared differently in many places. Like they make it only with grated panner and nuts. No veggies or potato. So you can try out even that method but that would be tooo plain.
- Most of the kids enjoy this dish since the spice level is null here.
- When you add salt to the sauce, watch out since the koftas also has salt. If less u can always add later.
