Quick Gobi 65














You dont have any veggies to cook today. The only one your refrigerator has now is cauliflower. Awesome you can do wonders with it. This is an easy and quick gobi 65 which i prepared in 10 min. This can be termed as quick side dish or an evening appetizer with hot coffee or tea. I bet that you'll love this. Restaurant style original gobi 65 will be updated soon :)

This recipe is subject to change since you can play around with whatever u have. A wonderful quick side dish or appetizer

Servings - 2

Ingredients
  • Cauliflower Florets - 1 Bowl
  • All purpose Flour aka Maida - 1/2 Cup
  • Corn Starch or powder - 3 Spn
  • Rice Flour - 1 Spn
  • Red Chilly Powder - 1 to 11/2 Spn ( Acc to ur spice level )
  • Ginger Garlic Paste - 11/2 Spn
  • Salt to taste
  • Pepper Powder - 1 spn
  • Ajinomoto - 1/2 Spn ( Optional )
  • Coriander Powder - 1/2 Spn
  • Garam Masala - 1/4 Spn
  • Oil - Required Amount to fry
  • Lemon and Cilantro leaves - For Garnishing
Method
  • In a large bowl add all the dry spices and flours.
  • Mix well and add water little by little to form a thick paste.
  • Add all the florets to this mixture.
  • Mix well and keep aside for 10 to 20 min.
  • Heat oil and fry the florets one by one.
  • Let the florets fry till golden brown.
  • Garnish with cilantro leaves.
  • Serve them with lemon
Best with any rice varieties or just plain rotis

Note :-
  • Do not boil the florets. While frying in oil it gets cooked automatically
  • Preheat ur oven to 350C. Once u fry the florets strain the excess oil and keep them in a baking tray and keep inside the oven. Turn off the oven. This keeps the florets crispy till the time u serve.

Palak Paneer









Palak - The most healthiest food ever !!! When you eat with paneer ... Adding some extra spice.. Wow... I usually do not like this dish as once i had a bitter experience when i had to eat this in one restaurant.... But the same thing i had at my place and felt so yummy that i was desperate to make this. I loved it so much that i would be def making dis often :)

Servings - 3

Ingredients
  • Palak - 1 Big Bowl or 1 Whole Packet
  • Paneer - 12 to 15 Cubes
  • Ginger Garlic Paste - 1 Spn
  • Cumin Seeds - 1/2 Spn
  • Coriander Powder - 2 Spn
  • Cumin Powder - 1/2 Spn
  • Turmeric - 1/4 Spn
  •  Red Chilly Powder - 1 Spn
  • Whole Garam Masala - Cardamom , Cinnamon , Bay Leaves and Cloves
  • Kasuri Methi - 1/4 Cup
  • Chopped Onion - 1 Cup
  • Green Chilly - 2 chopped
  • Tomato - 1 Chopped
  • Salt to taste
  • Oil - 4 Spn
  • Cream - 1/4 Cup
Method
  • In a large pan add good amount of water and let it boil.
  • When boiling starts add all the palak and immerse it such that all the palak gets cooked well.
  • Let it boil for around 3 to 5 min and drain the palak.
  • Grind the palak to a fine thick paste and keep aside
  • In a pan add oil,whole garam masalas and cumin seeds.
  • When spluttering starts add ginger garlic paste and fry well ( If you want the taste of garlic to be dominant add some finely chopped garlic and fry well along with ginger garlic paste )
  • When the raw smell vanishes add onion and salt. Fry well.
  • Add turmeric powder and fry well.
  • Add the chopped tomato and let it cook well till it gets mushy.
  • When the tomatoes are cooked well add coriander cumin and red chilly powders.
  • Mix well and add kasuri methi by crushing them on ur palms.
  • Mix well and add chopped green chilly.
  • Now add the pureed spinach extract and mix well.
  • Once the consistency is attained add the paneer cubes and mix well.
  • Switch off the stove and serve by topping with fresh cream.
Best with Garlic Naan and jeera rice :)

Note :-

Do not overcook the spinach. If done you will not get the real green color and will become dull.

Vegetable Frankie Roll










I love wraps... Its so nutritious and healthy that i keep on gobbling with endless limits... This one is going to be an easy wrap which has loads and loads of vegetables . But yes it might be a time consuming one. But believe me its worth it. Especially if you have kids around you'll kinda feel the importance of it since you can give them as snacks or lunch or even as an evening appetizer. Nobody can hate this recipe and yes you can make this once in a month.. Pretty neat isnt it ???

As i quote this is my own simple version. You can upgrade this version by adding anything you feel according to your tastebuds ;)

Servings : 2

For Wrap

Ingredients
  • All Purpose Flour aka Maida - 2 Cups
  • Wheat Flour - 1/2 Cup
  • Salt to taste
  • Warm Water - 1/2 Cup
  • Oil - 2 Spn
Method
  • Mix maida , salt ,oil and wheat flour
  • Make a dough by adding water slowly
  • Knead the dough till it become soft
  • Keep it aside. Let the dough rest for sometime
  • Make large tortillas or chappatis by heating in a pan ( Since we are using more of all purpose flour, you will get a big circle )
For Stuffings












Ingredients
  • Oil - 2 Spn
  • Veggies of your choice - Chopped lenghtwise
  • Onion - 1/2 chopped lengthwise
  • Paneer - 1/2 Cup chopped into cube shape or rectangle
  • Red Chilly Powder - 1/2 Spn
  • Coriander Powder - 1 Spn
  • Garam Masala - 1/4 Spn
  • Green Chillies - 2 to 3 Chopped finely ( Optional. Only if u need more spice )
  • Cumin Seed - 1/2 Spn
  • Ginger Garlic Paste - 1 Spn
  • Salt to taste
  • Coriander Leaves - 1/2 Cup chopped
Method
  • In a pan add oil and cumin seeds
  • Add green chillies little onion and ginger garlic paste.
  • Fry them well and add the remaining onions
  • Add salt and fry till the mositure is completely absorbed
  • Add the veggies one by one and fry them.
  • Add Chilly powder , coriander powder and garam masala.
  • Fry them till the raw smell vanishes.
  • Now add paneer and mix well.
  • Add coriander and switch off the stove.
For Wrap












Ingredients
  • Chaat Masala - 1 Spn
  • Chaat Chutneys ( Green and tamarind ) - 1 Small Cup Each ( Totally optional. Just for the taste )
  • Stuffings - A Bowl
  • Wraps - 4 to 5
  • Tooth Picks - 5 
  • A Bowl of mixed raw veggies ( Lettuce , tomato , onion , cabbage and carrot )
Method
  • Preheat the oven to 350C
  • In a large plate, place the wrap
  • Spread the chutneys on the top ( Instead of chutneys you can spread butter )
  • Place some fillings on top
  • Top it with the raw veggies
  • Cover the wrap slowly by closing the edge of the tortillas
  • Finish it off by pricking a tooth pick in the center of the wrap. This prevents the wrap from being split apart
  • Grease the baking tray with butter.
  • Place the wraps on the tray
  • Keep it inside the oven and lit bake for around  5 to 7 minutes
  • Take it out and remove the tooth picks
  • Cut them into two halves and serve them with ketchup or fresh salad
Note
  • You can also prepare the same by placing the wraps simply on a pan on stove top. But be careful while you are flipping it on the other side. Veggies may spit out.
  • The baking time is totally upto you. If you want more crispier you can increase the time accordingly.

Garlic Bread & Pasta



Getting bored of eating the same old north or south indian dish ??? Then you def have to try this out.. I bet you'll keep cooking this atleast once per week. This is a typical Italian combo which doesnt make you feel tight but keeps you saying 'Wow.. I had a perfect dinner '... The taste... Ofcourse my blog gives you only the best.. Do you know that I HATE PASTAS !!!!! I started to crave for this when i had a chance to eat pasta at Nitya's house one morning. It was so yummy that i was seriously shocked. When she told the method i just freaked out. It was so simple and easy. This weekend thought of making this with an appetizer. Try this out.. You will really love this :))

This is the basic pasta which you can have at any moment you want. Pastas are meant to be an experimental dish. So you can always play with them however you want ;)

Servings : 2

For Garlic Bread

Ingredients
  • Italian Bread - 1 Long Bread
  • Garlic - 5 Cloves chopped or minced
  • Italian Seasoning - 3 Spn
  • Butter - 1/2 Cup
  • Salt to Taste ( Omit if using salted butter )
Method
  • Preheat Oven to 350C
  • In a pan, add butter and allow it to melt
  • Once done add the minced garlic and fry well. If unsalted butter add salt too
  • Once the garlic gets coated well with the butter switch off and keep it aside
  • Take the long italian bread and split them into 10 to 12 pieces.
  • Take a loaf. Spread the butter garlic mixture. Sprinkle some italian seasoning. 
  • Repeat this process for all the loaves and keep it aside
  • Take the baking tray and grease the bottom with butter.
  • Keep the breads on to the tray. You cannot keep everything at once. So do it by batches.
  • Keep the tray inside the oven. Let it bake for 5 min
  • Take out and serve
Note : Before placing the tray inside the oven , just add some mozzarella cheese on top of each bread and bake. This is cheese garlic bread. Thats it :)

For Pasta


Ingredients
  • Pasta - 1/2 of the packet
  • Pasta Sauce - 4 to 5 Spn
  • Salt - 1/2 Spn
  • Olive Oil - 4 Spn
  • Italian Seasoning - 1 Spn
  • Onion - 1/4 Cup chopped
  • Bell Peppers - 1 Cup Chopped ( Preferably combination of red , yellow and green )
  • Cumin Seed - 1 Spn
  • Red Chilly Powder - 1/2 Spn
  • Coriander Powder - 1 Spn
  • Green Chillies - 3 to 4 chopped ( Required only if you want your pasta to be spicy )
  • Coriander Leaves - 1/2 Cup chopped finely
Method
  • First boil the pastas as instructed in the packet
  • Once cooked show the pastas in running cold water and transfer them to a bowl.
  • Add olive oil and mix them and keep them aside
  • In a pan , add olive oil and cumin seeds
  • When the seeds starts to splutter add the green chillies , onion and capsicum ( at the same time )
  • Add salt and fry them till they get cooked
  • Add the pastas , red chilly powder and coriander powder.
  • Mix them well and let them cook for 2 to 3 min
  • Now add the pasta sauce and mix well
  • Let them cook in the sauce for a min or so. 
  • Add the chopped coriander leaves.
  • Serve by sprinkling some italian seasoning on the top
Hot tasty Pasta is ready to be served with hot garlic bread. It is the best combo ever.

Note : Before serving sprinkle some mozzarella cheese and serve.

Schezwan Noodles












I loveeee noodless... Espescially this one freaks me out... Its so yummy spicy and tasty that everyone wud love dis. Espescially kids... If you have all the ingredients at your place then the chinese bistro restaurant is all yours now....

Guys i have used ajinimoto just for the sake of chinese flavour as i want my dish to be best :) This can be totally optional but u will def miss the real restaurant taste. So its upto you.

Note : Pregnant women : U dont have a choice :( Kindly avoid using ajinimoto...

Serves : 2

Ingredients
  • Chinese Noodles - 1 Packet ( Normal noodles can also be used but preferably the chinese one )
  • Schezwan Sauce - 3 Spn
  • Soya sauce - 1 tspn
  • Chilly sauce -1/2 spn
  • Vinegar 1/2 spn
  • Ajinimoto 
  • Salt to taste
  • Bowl of Veggies ( Carrot , Beans , Broccoli , Cabbage etc )
  • Onion - 1/4Cup Slit lengthwise
  • Spring onion or Scallion
  • Ginger - 1/2 chopped
  • Garlic - 4 Cloves Chopped
  • Sesame oil  ( if not available no prob ... u can use the regular one :) )
Method
  • Cook the noodles as described in the instructions f the packet.. keep it seperate... shud not be sticky... each noodle shud be seperate
  • Mix vinegar, salt and the sauces ( soya and chilly ) in a bowl
  • Add little oil to the above mixture and keep it seperately
  • Chop the veg lengthwise
  • In a pan , add oil
  • When the oil heats up add ginger garlic and the onion part of the scallion ( not the leaves )
  • Give a good fry till the ginger and garlic gets cooked. Add the chopped veg
  • Give it a gud stir still the veg gets fried nicely and the raw smell vanishes ( take care that it doesnt cook too much since the the veg noodles shud have the crunchy veg taste )
  • Then add the mixed sauce and the schezwan sauce to this
  • Stir it nicely so that the sauce gets well coated with the veggies
  • Since u have already added salt to the sauce add little bit of salt to this mixture and give it a gud stir
  • Add a pinch of ajinimoto 
  • Meanwhile in another pan , add some oil and add the cooked noodles. Fry it nicely till it becomes little crispy and the moisture is completely vanished.
  • Once done add the fried noodles to the veggies cooking and mix it well
  • Turn off the stove and sprinkle the chopped spring onion leaves
Hot awesome yummmy Schezwan noodles is ready 2 be served :))

Can be served with gobi manchurian or any chinese dish or sauce .....

Note : If u feel the noodles is quite lengthy just cut them with scissors after u boil them. This will make the stir process a bit easy

Mysore Masala Dosa



Nothing can beat our own south indian varieties. At one stage we crave for dosas and idlis espescially when we live at a place where we are not fortuante enough to have this. The most favourite of most is Masala Dosa. If i serve the same with spicy mysore masala....Mmmmm.. Caught ur expression ;) Am going to spill the method of preparation. I know this is a bit lengthy process.. But believe me when you notice the output, its worth the effect ;)  You are going to try this and let me know how you feel :)

Servings : 2

For Masala


Ingredients
  • Potato - 3 Boiled and Mashed
  • Onion - 1/4 Cup
  • Peas - 1/4 Cup ( Optional )
  • Turmeric Powder - 1/2 Spn
  • Salt - 1 Spn ( Acc to ur taste level )
  • Green Chillies - 2 Chopped
  • Coriander Leaves - For Garnishing
  • Mustard Seeds - 1 Spn
  • Chana dal aka Kadala Paruppu - 1/2 to 1 Spn ( If you like the crunchy effect )
  • Curry leaf - 5 Leaves
  • Oil - 1 Spn for tempering
Method
  • In a pan, add oil. Add Mustard seeds, chana dal and curry leaves
  • When it starts spluttering add onion,green chillies,salt and turmeric.
  • Fry till onion turns to a slightly brown colour.
  • Add mashed potato and peas ( optional )
  • Mix well and let it cook for a few min.
  • Garnish with coriander leaves
Note : You can add carrot for extra taste and color :)

For Mysore Chutney 

Ingredients
  • Dry Red Chillies - 10 ( Soak in warm water for about 2 hrs )
  • Garlic - 3 to 4 Cloves
  • Ginger - 1/2 Piece Chopped
  • Cumin Powder - 1Spn
  • Roasted Split Chana Dal aka Pottukadalai - 1/4 Cup
  • Salt - As per ur taste
  • Lime Juice - 1 Spn
Method 
  • Grind all the ingredients to a medium thick paste by adding water little by little
  • Remove to a bowl and add lemon Juice. Mix well.
  • When using you can add water to your required consistency.
Note : You can prepare this and store it in refrigerator

For Mysore Masala Dosa











Ingredients
  • Potato Masala ( Recipe Above )
  • Mysore Chutney ( Recipe Above )
  • Dosa Batter - 1 Bowl
  • Oil - For Spreading on the sides
  • Butter - 1 Spn
  • Ghee - 4 Spn
Method
  • Heat the tava and spread the batter on the tava. Make it thin and not thick.
  • Put oil around the dosa.
  • Wait till the dosa cooks. ( The signal is when the dosa becomes slightly brown in the corners and center )
  • Spread the mysore chutney all over the dosa
  • Put some ghee around and place the potato folling in the center.
  • Fold and serve with a dab of butter on top. 
Hot and Crispy Mysore Masala Dosa is ready to be served with coconut chutney and mild sambar :) Enjoiiiii

Aloo Peas Curry


Our face turns red when the clock ticks 7.00 pm in the evening since its time to prepare dinner.. Our tastebuds starts tickling to eat tasty dish.. People at our house stare at us as to when are we going to serve them the dinner.. We feel bored to cook :( Totally accepted and in that case just try out this simple easy dish which can be prepared in 20 min. Bet you'll love the taste and can be prepared in no time :)

Servings : 4

Ingredients 
  • Potato - 4 to 5 boiled
  • Onion - 1 Cup chopped
  • Tomato - 2 Chopped
  • Peas - 1/2 Cup
  • Cumin Seeds - 1 Spn
  • Ginger Garlic Paste - 1 Spn
  • Green Chilly - 2 Slit Lengthwise
  • Coriander Powder - 1 Spn
  • Chilly Powder - 1/2 Spn
  • Turmeric Powder - 1/2 Spn
  • Salt - 1 Spn ( According to ur taste level )
  • Kasuri Methi - 1/2 Spn
  • Coriander Levaes - 1/4 Cup
  • Oil - 2 Spn
Method
  • In a pan, add oil and cumin seed.
  • When it starts to splutter add some onion and ginger garlic paste. Let it cook.
  • Now add the remaining onion and green chilly.
  • Add salt and turmeric. Fry till slight golden brown.Meanwhile chop the boiled potatoes in cubes
  • Add tomato and fry. Once the tomato is ready add the coriander and chilly powders
  • Mix well and add the potatoes and peas.
  • Stir gently and add kasuri methi by crushing them in ur palms
  • Check for salt and spice. If required add at this stage.
  • Once done garnish with coriander leaves and serve hot
Quick easy potato peas curry is ready. Best with roti and phulka

Note : If you like the taste of garam masala you can very well add them too
