Hmm... Carrot Halwa... My Remo's most favourite dish. He always asks me to make this sweet often. He just loves it and would love to have it even if served daily ;) Its an easy recipe which can be made in just half an hour. But the taste is like heaven that people will def think that you have devoted more time and energy. I can bet that this is one of the most lovable and wanted sweet that you can prepare for any parties without a second thought or any other option. Just try out my version and you'll go mad !!!!! ;) ;)

Serves : 2
Ingredients
- Carrot - 1 Lb ( 4 cups of grated carrot )
- Milk - 2 cups of thick whole milk
- Sugar - 1 cup
- Dry Fruits - Ur Fav ( Cashews , Almonds , raisins etc )
- Cardamom Powder - 1 spn
- Desi Ghee - 4 Spn
- Grate the carrots and keep it separate
- Boil the milk for about 20 min. Keep stirring often to avoid spill over
- Fry the dry fruits in 1/2 spn of ghee and keep it separately
- In a large pan, add remaining ghee and when melts add the grated carrot.
- Cook for 8 to 9 min till the raw smell vanishes and the carrot becomes soft
- Once cooked add the boiling milk which have been boiling for about 20 min.
- Stir well and let the carrot cook in the milk for another 7 to 8 min
- Once done add sugar and cook for 5 more min.
- Once the sweet dries add cardamom powder according to your flavor and mix well
- Add fried nuts and garnish with raw cashews
Hot Hot Carrot halwa is ready to be served. I love this with vanilla ice cream. It just makes the best combo after a good lunch or tasty dinner ;) All the babies out der who r on diet , am extremely sorry you just need to keep distance from this :( :P
Note
- When you add sugar the sweet will become slightly watery. Dont panic. It is releasing its essence and the carrot will absorb it
- Dont add the whole cardamom. Prepare cardamom powder or get it from the store and add it :)
- Dont overfry the nuts. It will change the color and taste. So just fry till the raisins pop up. Thats the exact signal ;)
