Coconut Milk Potato Korma











Everyone thinks this one is going to be the same old one. Nope its not !!! I have an easy and a tasty recipe which you'll keep preparing often. I usually prepare this when am in no interest of cooking that day. When ready the aroma attracts me in such a way that i prepare my rotis like a robot .

I dedicate this wonderful recipe to the sweetest and best friend of mine - MY MOM !! When she makes this we just crave for it and eat this for 2 days... Love u mom for the awesome korma u make and also for guiding me on this .. Muah....

You can prepare your own coconut milk or use the stored one. But i recommend the one prepared by you at home. Wondering why ???? Just try out both the version and you'll know the fact :)

Here you go ......

Serves :4

Ingredients
  • Coconut Milk ( Thin and thick extract )
  • Potato - 5 to 6 chopped into cubes
  • Onion - 1 large
  • Masala ( Bay leaf , Clove , Cinnamon and Cinnamon )
  • Jeera
  • Green Chillies - 2 slit lenghthwise
  • Salt
  • Sugar - A Pinch
  • Red Chilly Powder - 2spn
  • Coriander Powder - 3 spn
  • Garam Masala - 1/2 spn
  • Cilantro /Coriander Leaves - For Garnishing
  • Oil - 3spn
Method
  • In cooker add oil and add jeera and masala items
  • Fry well and add the green chillies
  • Add onion and salt. Fry till the onions turn slightly brown
  • Add all the spices
  • Fry well and add potatoes. Mix well till the masalas get coated with potatoes
  • Now add the thin extract of coconut milk. Add till the potatoes and onions gets immersed well
  • Stir gently and close the pressure cooker.
  • Give around 3 whistles and switch off
  • When ready, open the cooker and let the gravy boil for few seconds
  • Meanwhile check the spice and salt level. If req add some now and give it a boil
  • Now add the thick extract and coriander leaves and a pinch of sugar ( a final touch )
Hot Spicy Coconut milk kuruma ready to be served with awesome rotis. Best with Idiappam. My Fav combo :)

Variation : You can use other veggies such as beans , cauliflower , carrot , peas etc . This will turn out to become a neat and a simple vegetable korma
